Wednesday, December 16th, 2009

A-ma-zing. That’s all we can say about this recipe. The lethal combination of Cookie Dough Bites, praline, ice cream, and cookies is our ultimate guilty pleasure of the week. This is the recipe that we followed, but of course, you can substitute ingredients for ones of your liking!

The ingredients are as follows:

For praline:
1 cup pecans, coarsely chopped
1 1/2 teaspoons salt
1 cup sugar

For sandwich layers:
1 1/2 sticks of unsalted butter at room temperature
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups packed dark brown sugar
2 large eggs
1 teaspoon vanilla

For sandwich filling:
1 box Chocolate Chip Cookie Dough Bites, finely chopped
2 pt store-bought premium vanilla ice cream, softened

Cookie Dough Bite and Praline Ice Cream Sandwiches Directions:

For Pralines:
1. Mix pecans and salt together in mixing bowl
2. Cook sugar under moderate heat until melted. Stir occasionally until melts into caramel
3. Add pecans and salt mix into pan with caramel, making sure they are well coated
4. Spread praline onto a foiled baking pan and allow time to harden (about 15 minutes)
5. Peel praline off pan and chop into fine pieces

For Sandwich Layers
1. Preheat oven to 375°F
2. Coat 2 baking pans with butter and place parchment paper on top
3. Combine flour, baking powder, baking soda, and salt
4. In a different bowl, combine brown sugar and butter and beat with electric mixer on medium-high until mixture is fluffy
5. Add eggs, one at a time, add vanilla, and continue beating
6. Reduce speed to low and include flour mixture
7. Separate batter into two even parts and spread into even layers onto both baking pans
8. Sprinkle in praline atop batter and bake for about 10 minutes or until layers are golden brown

Assembly:
1. Remove one sandwich layer and turn upside down
2. Include chopped Cookie Dough Bites to softened ice cream
3. Spread a thick, even layer of ice cream on top of upside down sandwich layer
4. Place other sandwich layer on top, praline side up, and press gently so sandwich sticks together
5. Wrap baking pan with plastic wrap and place in freezer for at least one hour
6. Take ice cream sandwich out of freezer and cut into 24 sandwiches

Cookie Dough Bites and praline ice cream sandwiches are the perfect combination of sweet and salty, chewy and crunchy, and is sure to run out as soon as you take it out of the freezer. We hope you try this delicious concoction. Let us know what you think of it! Bon Apetit!

Tutus 4 Tots Event

Wednesday, December 16th, 2009

As the holidays approach, it’s important to count your blessings and help those who are less fortunate than yourself. The staff at Cookie Dough Bites was delighted to participate in the first annual “Tutus 4 Tots” event courtesy of Ooh! La, La! Couture. Held in collaboration with Toys For Tots and Family First, the mission of the event was to provide a dress to hundreds of underprivileged girls before the holidays.

Held at Farnsworth Park in Altadena, the girls were escorted to the main auditorium filled with racks and racks of beautiful Ooh! La, La Couture dresses. The girls were given another treat as tween and teen celebrities dressed in Ooh! La La Couture fashion were waiting to be celebrity mentors to them.

Each girl received a pink Ooh! La, La! Couture goody bag with fashion essentials, pens, gift certificates, and Cookie Dough Bites. We were extremely grateful for being able to participate in this philanthropic event. Doing our part in helping those less fortunate than us really brings to reality how lucky we are. Participating in the event was priceless and we are delighted to be able to contribute to the cause.

We hope you all count your blessings as well! Have a great holiday season!
