Cookie Dough Bites Cheesecake

Happy Friday, everybody! Soon enough, the work week will be over and make way for the upcoming weekend – which is plenty reason to celebrate. Kick off the weekend with our newest recipe – Cookie Dough Bites Cheesecake! Once you have a bite, you won’t be able to get enough! Try out our recipe today!

The ingredients are as follows:

Crust ingredients:
1 1/4 c. graham cracker crumbs
1/4 c. light brown sugar
1/3 c. butter, melted
1 tbsp. cinnamon

Cookie Dough Bites Filling:
1 1/2 cup crushed Cookie Dough Bites
2 lbs. cream cheese
2 tbsp. all-purpose flour
1/3 cup heavy whipping cream
1 1/4 cup sugar
2 extra large eggs
2 egg yolks
1 tbsp. vanilla

Topping Ingredients:
4 oz. semi-sweet chocolate
1/2 tsp. vanilla
1/2 c. whipping cream

Cookie Dough Bites Cheesecake Directions:

1. For crust: Preheat oven at 350°F. Combine crust ingredients and line bottom and sides of a 10in spring form pan. Bake for 8 minutes.
2. For filling: Mix cream cheese, flour, sugar, eggs, heavy whipping cream, and vanilla together. Combine chopped Cookie Dough Bites into filling and pour into crust. Bake for 15 minutes at 425°F. Turn the oven down to 325°F and bake for 50 minutes more. Remove from oven and let cool for about 15 minutes.
3. For topping: Melt chocolate over low heat, stirring constantly. Cool slightly. Whisk in whipping cream and vanilla. Glaze top and sides of cheese cake with frosting mixture. Place in refrigerator about 30 minutes or until hardened.

We prefer to let the cheesecake cool for an hour or two for the perfect texture and to top it with crumbled Cookie Dough Bites. Trust me, the wait is well worth it!
